Last week’s dinners were all a hit with the fam, especially the Baked Polenta and Veggie Parmesan from Yummy Mummy. It was so filling and delicious!

Here’s what we’re eating this week:

1. General Tso’s Seitan from A Girl and Her Food Processor
Rob has been requesting seitan, and we’ve made this a couple times and loved it. Can’t wait for this dinner!

2. Spinach Roll-ups from Budget Bytes
Another tried and true favorite from one of my go-to food blogs. We make this very often and never get sick of it!

3. Tofu Mushroom Miso Soup from Steamy Kitchen
I’ve been craving miso soup, so I’m going to give this recipe a whirl!

4. Greek Tortellini Salad from Two Peas and Their Pod
Rob requests this one all the time. We love the Greek flavors!

5. Veggie Quinoa Quesadillas from Girls Guide To
We love quesadillas and quinoa so we can’t wait to try this recipe!

  2. I believe I’m what you call a flexitarian? I aim to eat meat only once per day. I once tried vegetarianism and stopped out of laziness. My compromise was to eat meat again, but less. Thanks for sharing. I’m interested in trying the seitan!

    • Since my hubby and baby are vegetarian, I tend to eat vegetarian at home and then stuff my face with meat when we go out.

      We are definitely a fan of seitan. It’s my favorite meat substitute and very easy to make.

  3. Oh the spinach roll-ups look really good! I haven’t been much into vegetarian meals but I think I just haven’t found the right recipes. I’m adding this to the menu next week to try it out :)
